Everything in proportion Dan,
if the head looks too big for the body I would walk away ..................
the Peduncle, which is the bit before the tail fin, should be nice and thick,
too thin and I would walk away .....................
if too thin a Peduncle, it is likely to be NOT a big adult, but also a very poor shape.
Some of the Japanese breeders seem to be able to sex their tosai with 70% or better success rate time and time again,
even with 6 month old tosai ! ........ amazing !
I have bought them at that age " guaranteed female " by the Japanese breeder ! .... truly amazing !
Having said that ......... I actually prefer the male shape of an adult Koi !
But either sex, it is important to avoid the Koi taking on that horrible rugby ball shape, similar to wild carp !
the best way to do this in my opinion is to give them a strong return flow to swim against ............
just like us, exercise keeps them from being obese ! ..... and not going overboard on feeding too !
